Well, Poland as a country has a some what, topsy turvy history at best, for the most part except for about 100 years where Poland was partitioned between germany, russia and austria, Poland for the majority of its history has been an independent country. Though Poland has been Independent for most of its history, it has always had to make great alliance’s with countries where either geographically greater, or had a strong military presence among the ruling parties, because of this, Polish Cuisine has been influenced by these alliances as well through royal marriage.
Traditionally Polish Cuisine up until the early 1500 was mostly fish and vegetable, along with the infrequent Polish Buffalo, Lamb, and european bovine, this was mostly caused by the Roman Catholic Churches influence in the country between 966 A.D. through present day. Many People when they first think, of Polish food they think, Peirogi with pork filling, Pork Cutlet, mostly Pork based dishes. Pork how ever was only first introduced after the marriage of Bona Sforza of Italy to Sigismund the first, king of Poland at the time.
For Polish Meat’s and historical purpose and to stay true to what I feel is more historically correct this list of Meat omits pork due to the dishes used with pork are not specific to Poland or even the eastern block. Enjoy:
